Ingredients (2 servings)

1 lb shrimp, peeled & deveined

2 medium zucchini, spiralized into noodles

2 tbsp butter (or ghee)

3 cloves garlic, minced

Juice of ½ lemon

Salt & pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Pat shrimp dry, season with salt & pepper.

In a large skillet, melt butter over medium heat.

Add garlic and sauté for 30 seconds.

Add shrimp and cook 2–3 minutes per side until pink.

Toss in zucchini noodles and lemon juice, cooking just 1–2 minutes until warm but not soggy.

Garnish with parsley and serve immediately.
