  • 2 lbs. phyllo pastry

Directions

  1. Preheat oven to 350°F.
  2. Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring frequently until they begin to soften, approximately 5 minutes.
  3. Add garlic and dill to skillet; continue cooking for 5 minutes until onions are soft and caramelized.
  4. Remove from heat and stir in parsley, green onions, lemon juice, and ground pepper.
  5. Roughly chop spinach, bring a large pot of water to a boil, add spinach, and cook for 2 minutes. Drain and squeeze to remove excess water.
