Not only are these chops packed with flavors, but they also come together in under half an hour—perfect for busy evenings when you want a home-cooked meal without the fuss.

What makes this dish truly special is how simple it is. By letting your pork and dairy ingredients reach room temperature before cooking, you ensure evenly cooked meat that rivals any gourmet meal. It also helps prevent curdling in your creamy sauce, giving you the velvety texture that everyone craves.

Flavor Explosion with Minimal Effort

The combination of juicy pork and earthy mushrooms creates a delightful contrast of flavors. And let’s not forget the garlic and onion, which infuse the dish with an irresistible aroma that will have everyone gathering around the table. Plus, if your family includes someone who adores mushrooms or creamy sauces, you’re in for a treat!

Now, let’s get into making this delicious meal!

Ingredients

  • 3 T. extra virgin olive oil
  • 4 bone-in pork chops, approximately 1/2” thick, room temperature
  • Sea salt and freshly ground black pepper, to taste
  • 8 oz. white mushrooms, washed and sliced
  • 2 T. yellow onion, finely minced
  • 2 cloves garlic, peeled and minced
  • ¾ c. chicken broth, preferably organic
  • ¼ c. half and half, room temperature
  • ¼ c. non-flavored, full-fat Greek yogurt, room temperature
  • 3 T. fresh parsley, finely chopped (divided)
  • Optional: 1 t. ground arrowroot (to thicken sauce)

Directions

  1. Heat olive oil in a large, heavy-duty skillet over medium-high heat.
  2. Season pork chops on both sides with salt and pepper, then brown them in the hot skillet for about 3-4 minutes per side.
  3. Remove the pork chops from the pan and set them aside.
  4. Reduce the heat to medium and add the sliced mushrooms, cooking until they release their juices (6-7 minutes).
  5. Add onion and garlic, cooking for another 1-2 minutes.
  6. Deglaze the pan with chicken broth, scraping up the brown bits.
  7. Return the pork chops to the skillet, reduce heat to low, cover, and cook for 8-10 minutes until cooked through.
  8. Transfer pork chops to a serving plate and keep warm.
  9. In the pan, stir in half and half, Greek yogurt, and 2 tablespoons of parsley until blended, and heat through (1-2 minutes).
  10. Season with salt and pepper to taste, and serve the mushroom sauce over the pork chops, garnishing with remaining parsley.
