Smoked Salmon, Smashed Avocado & Poached Egg Bagel

Serves: 2 Cooking time: 4 minutes Level: Capable cooks INGREDIENTS 100g Tassal smoked salmon 2 bagels 1 avocado 2 eggs 1 lemon Pepper, to season INSTRUCTIONS 1. Poach two eggs in boiling water for 3-4 minutes. Toast bagels. 2. Peel and smash avocado and apply to bagel with a squeeze of lemon juice. 3. Lay smoked salmon slices over the smashed avocado and place a poached egg on top. Season with pepper to serve.
